Step 1
In a large frying pan add oil along with the garlic. Turn heat to HIGH and cook garlic until it begins to soften, about 30-60 seconds. Do not let it burn.
Step 2
Add rice and stir fry (stir and flip) until it’s coated and begins to crisp, about 3 minutes.
Step 3
Push the rice to the side and crack the eggs into the pan. Scramble and cook until set, about 1 minute.
Step 4
Add soy sauce, sesame oil and black pepper. Toss to coat and stir-fry for another 2 minutes or so.
Step 5
Taste for seasoning and add more sauce as necessary. Garnish with green onion and serve.
