Rub pork chops with salt and pepper. Brush each side with pesto mixture.

Arrange pork chops on a nonstick baking sheet. Scatter with onions and garlic. Drizzle with remaining pesto mixture. Roast for 6-8 minutes, until pork chops are juicy but cooked through.
Step 5
Remove from heat and transfer to a plate. Cover pork chops with foil and allow them to rest for about 5 minutes before serving.
Step 6
Serve drizzled with pan juices, onions and torn basil (optional).
