Step 1
Preheat the oven to 180C. Grease a cake tin with margarine.
Step 2
Add the margarine to a bowl. Use a hand mixer to beat until fluffy. Add the sugar and mix well to combine. Set aside.
Step 3
In a second bowl, add the tofu, semolina, flour, vanilla, lemon zest and juice, baking powder and a pinch of salt. Mix well. Add this mixture to the sugar mixture and combine until creamy.
Step 4
Pour the batter into your prepared cake tin and bake for 30-40 minutes. Use a skewer to check if the cake is cooked.
Step 5
Once cooked, remove the cake from the oven. While it is still hot, spread the melted margarine on top and dust with icing sugar. Let the cake cool before serving.
