Step 1
Add the eggs to a large mixing bowl and whisk until foamy. Whisk in the milk, honey, and vanilla until smooth. If using creamed honey, make sure it has been incorporated.
Step 2
Add the flour and salt and whisk again until just combined. If the batter looks very thick (it should pour easily, about the consistency of drinking yogurt) add the extra milk or water. If using whole grain flour, you will need it.
Step 3
Set the batter aside while you heat the pan over medium heat. Once hot, add a little oil to the pan. Pour about 50 ml (a scant ¼ cup) of batter into the pan and swirl the pan to spread the batter out.
Step 4
Cook for about a minute, then flip and cook about a minute more. Adjust the heat as needed and cook the remaining batter until it's been used up.
Step 5
Serve the pancakes warm with any desired toppings.
