Step 1

FIRST STEP:After grating the potatoes, be sure to drain off all liquid. This is done by using your hands and a colander or placing the potatoes in a towel and wringing the liquid out.

Step 3

Place the potatoes in a medium sized bowl and add the flour, onion, eggs and salt

Stir to combine well

SECOND STEP:Heat a skillet with a neutral flavored oil over medium to medium high heat

Using a measuring cup or ladle, place approximately ⅓ cup of batter for each cake in the heated oil. If needed, flatten with the back of a spoon

THIRD STEP:Fry on each side until golden brown and crispy, place on paper towel to drain excess grease

Step 13

Serve immediately with your choice of toppings
