Step 1

Preheat the oven to 180°C and grease and line a loaf tin.

Step 2

Sift together flour and baking powder in a medium bowl, then add rosemary and sea salt.

Step 3

Combine the eggs, sugar, butter and vanilla in a separate bowl and mix until well combined.

Step 4

Add dry ingredients to wet ingredients and mix with a wooden spoon until just combined.

Step 5

Add apple to cake batter and mix until just combined.

Step 6

Pour the cake batter into the prepared loaf pan and bake for 50-60 minutes (or until the top is well browned and the cake is cooked through).

Step 7

Let the cake cool in the loaf pan for 15 minutes, before turning out onto a cooling rack for at least 30 minutes. Slice to serve.
