Step 1
Slice the onions crosswise and then separate them into rings. Add them to a large bowl and then toss them with 1/2 cup of the gluten free flour, and let sit for 30 minutes.
Step 2
Heat oil in a large heavy-bottomed pot or dutch oven to 350 degrees F. You'll need at least 2-3 inches of oil.
Step 3
Whisk together all of the remaining dry ingredients. Then slowly whisk in the egg, followed by the gluten free beer. Once fully combined, slowly pour in the club soda, stopping once the batter is a similar thickness to pancake batter (when you dip an onion in, some batter should run off, but the onion ring will stay thickly coated). You can add more gluten free flour if it's too thin, or more club soda if it's too thick.
Step 4
Working in batches, add the onion rings to the hot oil one at a time, and fry until golden brown and crispy. Set on a wire cooling rack lined with paper towels to cool.
Step 5
Serve alone or with ranch. Enjoy!
