Preheat your oven to 350°F

Spray a 12-cup muffin pan with coconut oil

In a food processor or blender, combine the bananas, oats, almond milk, egg, baking powder, vanilla, cinnamon, salt and maple syrup (if using)

Blend on high for about 1 minute or until the batter is silky smooth, turning off the machine and scraping the sides of the container with a rubber spatula, as needed

(If your machine has a "pulse" button, I like to use it to really grind up the oats and bananas

) Remove the lid and gently stir in the chocolate chips

Divide the batter among the muffin cups so that each cup has the same amount (see Tip)

Bake until golden and firm in the center, 30 to 35 minutes
Step 9
Let cool for about 10 minutes before removing from the pan

Store in an airtight container
