Quarter the Goldenberries and leave to soak in water overnight.
Step 2
Scrape out the pulp of the vanilla bean. Peel the ginger and cut it in slices. Purée the Goldenberries and mix them with the vanilla bean, the vanilla pulp, the ginger, the lime juice and the gelling sugar in a pot and let it soak for 15 minutes.
Step 3
Put on the heat and boil for 3-4 minutes while stirring constantly. Then remove the vanilla bean and ginger.
Step 4
You may have to remove some foam from the Goldenberry jam. Fill the hot jam in clean Twist-off-glasses, close the glasses and put them upside down for five minutes. Turn them around again and let the jam cool.
