Step 1
To a mixing bowl add flour, sugar, salt, baking powder and baking soda. Whisk well to combine set aside.
Step 2
To a separate bowl add milk, buttermilk, eggs, vegetable oil and eggs. Whisk well.
Step 3
Slow add the wet ingredients into the dry ingredient bowl, whisking until most of the lumps are gone. Don't over-whisk.
Step 4
Set the batter aside to thicken while you preheat the oven to 375 degrees.

Preheat an 8" non-stick skillet over low medium heat. Put the dial on the stove right between low and medium. Allow the skillet to preheat for 8 minutes.
Step 6
Oil down the pan and wipe out excess oil. You want a light coating but not a pool of oil in the pan.
Step 7
Add 2 ladlefuls of batter to the pan. Cook for 8 minutes. There should be gentle bubbles showing, especially around the edge. The edge should look like it's setting up after 8 minutes. If it's cooking faster than that, turn your heat down a bit.
Step 8
Add pan to the oven on the top rack for 9 minutes.
Step 9
Remove and run a rubber spatula around the edge. The pancake should pop out when you flip the pan over. Store cooked pancakes on a warm plate while you make the rest.
Step 10
For the syrup, cook butter over low medium heat until just melted. Add honey, maple syrup and low sodium soy sauce. Whisk until combined. Leave on low heat until you're ready to serve.
Step 11
Make a 3 pancake stack, top with a 1/2 tablespoon of butter and pour over the honey butter maple syrup. Serve hot.
