Grandma's Honey Muffins

all-purpose flour

sugar

baking powder

salt

egg, room temperature

2% milk

butter, melted

honey

Delicious Flavor!  I used Ronnie's steps( Feb 25, 2020). I have a melt setting on my stovetop and melted butter and honey together in a small saucepan. Removed from heat and added cold milk.  Stirred, then added slightly beaten egg to the saucepan and combined the wet ingredients. This makes about 3 cups of batter, so I had the dry ingredients in my 4 cup Pyrex measuring cup. Added wet mixture to that and stirred with a long handle silicone spatula/spoon, which gets in to the bottom corners quite well. The handle with spout measuring cup made it easy to pour into muffin tin. I would just add a new beginning step: Take butter for spreading on warm muffins out of the fridge first so it spreads even better.

Excellent recipe, put less sugar 1/3 and use quarter cup steel-cut oat and, finally, a teaspoonful of vanilla

This recipe is simple and delicious. I used orange blossom honey and it delivered on the honey flavor. You could certainly change up the flavor with a deeper flavored varietal of honey. This recipe will make a repeat in our home.

Exactly what I wanted them to be. Fantastic flavor and texture. Perfect to accompany any meal or to eat as a scrumptious snack.

Made this just as written. The family loves these muffins. Such an easy recipe! Will be serving these alongside a couple of my pork roast recipes.

Very easy to make - just need to make sure you're using high quality honey. The muffins are great as a snack, breakfast, etc.!

Wonderful easy recipe. I did omit the sugar from the muffin batter because I topped the muffins with a 1/4 cup of raw sugar. I also topped each muffin with a teaspoon full of cinnamon chips. The muffins had a wonderful texture and with so few ingredients are able to be mixed to get in less than 10 minutes. Recipes make exactly 12 muffins which is the perfect amount for my family. If you want to freeze them, make them in a greased muffin tin, not a paper lined one.

Fantastic! I would like to add my two cents, I made these with no problems with needing warm eggs or issues with the honey mixing,this is how Step 1: Put butter in a small pan on low to melt Step 2: Mix dry ingredients thoroughly Step 3: When butter is melted remove from heat and add honey to the melted butter Step 4: Mix cold egg and milk in small bowl with fork thoroughly Step 5: Add milk mixture to dry ingredients mix thoroughly Step 6: Add honey/butter mixture last and mix thoroughly Quick and easy, I used a round 1/4 cup measuring cup to fill the muffin cups

I added 1/2 tsp of cinnamon to my mix and I did NOT use 2% milk and I'll bet Grandma didn't either.  TOH and it's love of 2 % milk really gets me. That might be why some thought they were a bit dry. Always use full fat dairy for best results.

Reminded me of cornbread muffins.  Did not have a honey flavor.  Kinda plain tasting muffin without adding jam or more honey/cinnamon.  More like a biscuit, butter and jelly taste with a muffin texture.  If you have to have sickly sweet for your breakfast these are not it.  I grew up on corn muffins for breakfast so they fit my expectations and taste.

Delicious and simple to make.  Perfect amount of sweetness.

Perfect basic recipe -- change milk to orange juice and add dried cranberries -- make as written add blueberries or raspberries -- love it -- found this about two years ago on this site and have made it about once a month since then.

Tried this recipe tonight for supper.  Next time I will warm the honey before mixing with other ingredients. I had trouble with the bottom of muffins getting too brown and I think it was the honey. Too hard to mix without first warming it so it’s a little more runny. This is a keeper! Very tasty!  Will definitely make again.

Great taste -- not to sweet with honey.  Not heavy -- wonderful texture -- similar to cornbread but fluffier. Very simple to make, but I followed Ronnie's Feb 26, 2020 suggestion for mixing ingredients, and they did not stick or burn.  Also could fix lots of ways to go with whatever meat your serving.  Would even go with fish.  Plus I am Diabetic and substituted Stevia Baking Blend for sugar and raised/baked OK -- pleasantly surprised, especially with other items I baked with Stevia Baking Blend did not raise/bake as well.  I too will bake at 375 next time since countertop oven getting old and temperatures are off.  But finally gives me another muffin that is tasty and texture is wonderful instead of cornbread, bread, or biscuits to eat with dinner, salads at lunch or even nighttime snack without too much sugar.  After reading other comments will try adding nuts (pecans or walnuts -- depending on meat), blueberries/cranberries, or even vanilla extract (but would cut back on honey).  These muffins are absolutely wonderful, and am glad I stumbled on recipe.  Thanks to whomever submitted this recipe -- its a keeper in my house.

I made these muffins this morning and my husband and I both ate two right out of the oven.  They are simply delicious!  I did add about 1 tablespoon of grated fresh orange peel.  It was enough to just give a hint of orange flavor.  Next time I may add more orange peel.  Lemon peel would also be good.  Thank you for the recipe!

Fabulous!  I added 1 cup of blueberries to them.

Absolutely wonderful.....split in half and use as shortcake...top with strawberries or peaches...great plain too !!! Also made a batch with 1 cup chocolate chips...delicious...no butter needed. Also baked at 375

I made this recipe tonight to go with my oven stew. It is delicious. I followed the recipe to a T. I did take the step of warming the milk in the microwave for about 20 seconds to bring it to room temperature so it would mix better with the other liquid ingredients. This is a keeper. The flavor is wonderful and when in a hurry it's fast to mix and throw in the oven. I also used foil lined cupcake papers because I am one of those who hates scrubbing muffin tins. Thanks for the wonderful recipe. It's awesome.

I was looking for a simple, sweet recipe to make before going to the beach and found this! I had all the ingredients and they seemed pretty easy to make. The muffins were finished within a half hour and turned out to be great travel snacks. Thanks for sharing!

These were very good. Served them with homemade Cinnamon/Honey Butter. (1 stick softened butter, 3 Tbl. honey, 1/4 tsp. ground cinnamon and 1/8 tsp. salt)
