Step 1

Preheat oven to 180C.

Step 2

Combine almond meal, sugar and almond essence in a large bowl. Add the lightly beaten egg whites and stir until the mixture forms a firm paste.

Step 3

Roll level tablespoons of mixture into the flaked almonds, then roll into approximately 8 cm logs.

Step 4

Press on the remaining almonds.

Step 5

Shape the logs to form crescents.

Step 6

Place on baking paper-lined oven trays and bake for about 15 minutes or until lightly browned. Cool on trays.
