Step 1

In a large bowl, combine the lemon juice, minced garlic, olive oil, oregano, thyme, salt, and black pepper. Add the fish fillets to the bowl and marinate for 30 minutes.- 1/4 cup lemon juice- 4 cloves garlic (minced)- 1/4 cup olive oil- 1 teaspoon dried oregano- 1 teaspoon dried thyme- 1 teaspoon salt- 1/2 teaspoon black pepper- 4 fish fillets

Step 2

Preheat the oven to 400°F (200°C). Place the marinated fish fillets on a baking sheet lined with parchment paper. Arrange the chopped vegetables around the fish. Drizzle the vegetables with some olive oil and season with salt and pepper.

Step 3

In a separate bowl, combine melted butter, minced garlic, salt, and black pepper. Add the diced potatoes to the bowl and toss to coat them with the garlic butter mixture. Transfer the potatoes to a separate baking sheet.

Step 4

Bake the fish and vegetables for 20-25 minutes, or until the fish is cooked through and the vegetables are tender.
