Rest and Slice the Chicken:Allow the chicken to rest for 5 minutes before slicing.

Assemble the Bowls:Start with a base of rice or quinoa, then add tomatoes, cucumber, lettuce, red onion, sliced chicken, and tzatziki. You can drizzle with extra olive oil, lemon juice, or a lemon tahini dressing if desired.
