Marinate the Chicken:In a bowl, mix olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes.

Flatten the chicken to about 1/2 inch thick and marinate in a shallow dish or ziplock bag for at least 30 minutes, up to several hours.

Make the Tzatziki:In a bowl, combine Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, and dill. Set aside for now.

Cook the Chicken:Air Fryer: Preheat to 380°F. Cook the chicken for 7 minutes on one side, then flip and cook for an additional 3-4 minutes until the internal temperature hits 165°F.

Step 5

Skillet: Heat oil or butter over medium-low heat. Cook the chicken for 7-8 minutes per side until golden and the internal temperature reaches 165°F.

Step 6

Rest and Slice the Chicken:Allow the chicken to rest for 5 minutes before slicing.

Step 7

Assemble the Bowls:Start with a base of rice or quinoa, then add tomatoes, cucumber, lettuce, red onion, sliced chicken, and tzatziki. You can drizzle with extra olive oil, lemon juice, or a lemon tahini dressing if desired.
