Greek Chicken in a Pita

lime

olive oil

garlic,

coriander

cumin

Salt and pepper

mint or cilantro leaves

boneless, skinless chicken breasts,

yogurt

cucumber,

mint

tomato, chopped

Mixed lettuce leaves

pitas

In a blender combine juice, 1 tablespoon oil, garlic, coriander, cumin, salt and pepper and mint or cilantro leaves. Process until smooth and pour over chicken to marinate. Refrigerate chicken and allow to marinate for 30 minutes. In a small bowl stir together yogurt, cucumber and chopped mint. 

In a large skillet heat 1 tablespoon olive oil over medium high heat. Add marinated chicken and cook for 8-10 minutes, stirring occasionally. Heat pitas under a broiler or in a toaster oven. Slice open pitas and stuff with chicken, tomatoes, lettuce and top with yogurt dressing. Serve immediately.

Planted some mint a few years ago for my wife’s koi pond and waterfalls. The stuff grows like weeds in the South. <br />Now I know what to do with it!<br />Quadrupled the mint for the marinade and sauce. So good!!<br />This is a simple recipe that is both nutritious and delicious.

this marinade is fantastic - i usually use this marinade and then serve the chicken with warm pitas, chopped tomotoes, chopped cucumbers, feta, cabbage/lettuce, and for the dressing i mix greek yogurt with siracha, lemon and salt.  a staple now!

I have made this recipe many times, each being great.  At first I would skip the cilantro, but then I added it and it gave the chicken a pretty, refreshing color.  The flavor on the chicken is very authentic, and it is easy to make.

I love this recipe.  It was really quick and easy.  The grocery store near my house didn't carry mint so I substituted with Cilantro.   Instead of eating with pita bread with yogurt sauce.  I made salad with tomato, cucumber, red onion and lemon.  Also i cooked butter rice (melt 2 tablespoon butter, saute two cups of rice and put swanson low sodium chicken broth instead of water.)  

This had wonderful flavor!  Instead of cutting up the chicken, I marinaded whole chicken breasts, grilled it, then sliced it on a greek salad...EXCELLENT!  I also used half mint and half cilantro, as we are not huge mint fans.  Will definitely make again!

My family loves this recipe. It's a quick, easy and delicious. One of my daughter's is vegetarian, so I marinate one Qorn "chicken" breast separately from the rest of the family's chicken. We  use  tzatziki sauce from Costco instead of making the yogurt cucumber sauce. It's a big hit in my house!

I like lighter dishes with lots of flavor, especially in foreign cuisine. This is a good dish to prepare a day ahead, so the next day after a few simple steps it's ready to go. I altered the recipe a bit by using extra lemon juice and garlic in the marinade, marinated for 24 hours, chopped the cucumber and cilantro. The next night after getting home late from work I just mixed the yogurt sauce, cooked the chicken, heated the pitas and they were ready to be stuffed. As a side I used some 5-minute Garlic and Olive Oil couscous with chickpeas added. Yummy! Next time, I might try this on a flavored wrap, since my brand of pitas were crumbly and too small.

I found this to be one of the better grilled chicken recipes I've found in a long time. A very bright, refreshing and low cal. When and paired up with the tzatziki (which I never thought it was THAT easy!), even better. I would make this for weekend bbq's anytime!

These are delicious, and very easy to make.
