Step 1
Preheat the oven to 200°C (390°F). Finely dice the garlic and roughly chop the onion.
Step 2
Slice the potatoes into chunky wedges and top and tail the beans.
Step 3
Skin the chicken and place on a large, high sided baking tray.
Step 4
Place the onions, green beans and potatoes around the chicken.
Step 5
Sprinkle over the garlic, herbs and lemon juice, then coat in olive oil.
Step 6
Bake for 25 mins.
Step 7
Remove from the oven and add the passatta. Turn the chicken and vegetables in the sauce. Lower the temperature of the oven to 180 and cook for a further 20-25 minutes.
Step 8
Remove from the oven and check that the chicken is cooked through before serving.
