Step 1
Pre-heat your oven to 200°C/390°F (fan-forced).
Step 2
On a large baking tray toss the sweet potato in 2 tbsp of olive oil and seasoning and bake for 10 minutes.
Step 3
While that’s baking prepare the onion, capsicum and fennel.
Step 4
Then make the meatballs by squeezing the ingredients together and then forming balls a bit larger than a golf ball.
Step 5
Once the sweet potato is cooked, toss the onion, capsicum and fennel in the olive oil and add to the pan.
Step 6
Top with the meatballs and bake for 20-25 minutes or until the meatballs are cooked through.
Step 7
Make the dressing by combining all the ingredients together in a jar or small bowl (including the juice from the lemon you zested for the meatballs).
Step 8
Once done, remove from the oven, crumble over the feta and scatter over the olives and greens.
Step 9
Drizzle with the dressing and enjoy immediately.
