Step 1
Place milk and whipping cream into mixing bowl and cook 10 min/185°F/speed 1. Remove mixing bowl, open mixing bowl lid and allow mixture to cool in mixing bowl until temperature reaches 104°F-113°F (approx. 60 min., set mixing bowl into position to check temperature). Meanwhile prepare a ceramic or glass bowl (approx. 1-1½ qt) (see Tip).
Step 2
Once mixture is cool, set mixing bowl back into position. Add yogurt and mix 10 sec/speed 4. Pour yogurt mixture into prepared bowl, cover with cling wrap, place into Varoma dish and set aside. Clean mixing bowl.
Step 3
Place water and lemon juice into mixing bowl. Place Varoma with yogurt into position, secure Varoma lid and start Fermentation /8 h/160°F. Refrigerate yogurt for at least 2 hours.
Step 4
Strain chilled yogurt through 2 layers of cheesecloth (reserve whey). Before serving, stir yogurt to smooth, adding 2-3 tablespoons of reserved whey. Store yogurt covered in refrigerator for up to 8 days.
