Step 1

In a medium pot, heat olive oil to medium heat. Then add garlic and yellow onion and sauté mixture slowly until they are softened and translucent.

Step 2

Add green beans, potatoes and tomatoes to onion garlic mixture. Stir to combine all ingredients and then season with salt, pepper and red pepper flakes.

Step 3

Cover the pot and simmer vegetables over medium heat for approximately 30-40 minutes or until beans and potatoes are tender. Stir occasionally and taste the cooking broth to ensure the mixture is well seasoned. Adjust seasoning as necessary. When done, transfer vegetables to a beautiful dish and sprinkle with fresh basil leaves and serve with crispy Italian bread....Enjoy
