Chop polenta into 1-inch chunks, add to small pot with 1 cup water + bring to a boil, then simmer 2-3 min; take off heat + mash until smooth; cover
Step 2
Heat 1 tbsp oil in a skillet over med-high; add chorizo + sauté 5-7 min until browned + hot; set aside
Step 3
Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min until tender
Step 4
Add everything to plates + drizzle with 1-2 chile per plate—yum!
