Place tomatoes, onion and garlic cloves in a skillet over medium heat. Toss with a large spoon to avoid sticking to skillet and to roast evenly.

Transfer roasted vegetables to a blender container. Add cilantro, parsley, jalapeño, lemon juice and olive oil. Salt and pepper to taste.

Heat large skillet over medium heat. Carefully pour in blended sauce without straining. Cook until the sauce darkens in color. Remove from heat and set aside.

Season fish filets with salt and pepper.

Melt butter in a large frying pan over medium heat. Add filets and cook thoroughly; approximately 3-4 minutes on each side. Do not overcook. Place filets on a serving tray, top with green mole sauce and garnish with cilantro leaves. Serve with white rice and corn tortillas.
