Green Salad with Blue Cheese Dressing

Roquefort cheese, chopped

mayonnaise

heavy cream

tarragon vinegar

salt

black pepper

lettuce,

Heirloom tomatoes, tomatoes

Place the cheese, mayonnaise, heavy cream, vinegar, salt and pepper in the bowl of a food processor fitted with a steel blade. Process until smooth.

Place a wedge of lettuce on each serving plate with 2 slices of tomato. Pour enough dressing over the lettuce to moisten. Serve immediately.

This dressing is crazy delicious!    I will NEVER buy store-bought blue cheese dressing again.  I made it just as called for, except less salt.   I always use less salt in recipes.  Salt is great, but a little less is generally better.  I have made it several times and given it to friends.  Always great.  Thanks Ina!

This was very good, and will be my go-to for fresh blue cheese dressing.

I made this dressing today! I used regular blue cheese as that is what I had along with adding scallions and using a garlic vinegar I had on hand as well. It's really delicious. That is the reason for 4 stars as I did not make exactly. Ina never fails me for inspiration. 

When I first found this recipe several years ago I read some reviews as you are doing now.  One of the reviews stated "You will never buy store bought dressing again."  Pfffffft, I said.  Guess what hasn't seen my shopping cart since.  Absolutely delicious.  Thanks Ina!

I love this recipe.  It's quick and easy.  The best part is it is so good.  I love it for the wedge salad and it's also great with a steak salad. I also use it as a veggie dip.  It also keeps several days in the refrigerator.  If you are salt sensitive, try using less salt and keep adding more until it tastes good to you.  Yummy!

OMG. THIS dressing is so unbelievably delicious. So simple yet so full of flavor. Ina's recipes never disappoint.

This is a very good blue cheese dressing recipe.  Although, we don't really care for Roquefort cheese because its so strong in flavor I used blue cheese in place of it.  My husband favors Ranch dressing over blue cheese but decided to try it and loved it.  Another successful recipe!

This recipe is a fine basic blue cheese dressing and I have no complaints at all.  It's great on a salad.  I used half and half because I don't keep cream at home and there was no problem.  I also added more cheese and more acid because I like strong flavors.  As a dip I would add a little more cheese and a tad more salt.  This type of dressing may separate or seem runny so emulsify in a blender or shake or whisk firmly to bring back the consistency.

Great dressing...especially with Buffalo Wings!  I wanted a nice blue cheese dip/dressing to go with the wings I was making and this was perfect!  I noticed a lot of reviews indicating it could turn runny and I wanted a really thick dressing.  To accomplish a thicker dressing I whipped the heavy cream before adding to the processor and...it turned out PERFECT!  Nice and thick and perfect with the wings and celery I was serving!

I loved this! I didn't have mayonnaise so I used ketchup, and I didn't have heavy cream so I used lemonade, and I didn't have tarragon vinegar so I used Tabasco, and I didn't have Roquefort so I used Kraft singles. It was amazing!!! Just kidding. I made it exactly to recipe, and it was delicious.

This is a pretty good dressing but I thought it needed more bleu cheese.  The only disappointing thing was the next day it was very runny and not as good tasting.  Will have to try and tweek it a bit to keep it thicker the next day.

To save time (or so I thought, I bought some blue cheese dressing from the store.  What a mistake. Never again.  I've spoiled myself with my  "Ina cooking."  Tonight, I made Ina's blue cheese dressing.  It is simple, easy, and far superior to anything that comes out of a store.  Do the right thing, make it at home.  It just takes your meal to that next level.  mmm, mmm, really good.

Used blue cheese instead of Roquefort because I much prefer blue cheese.  Recipe was easy and very good and was better than the Bob's Big Boy dressing that my family loves.

Great dressing and very easy to make.  I substituted 1/2 tsp dried tarragon and rice wine vinegar for the tarragon vinegar.  This will be a new standard in our home.

This dressing is so easy and so good. The only problem is that if I don't use it within a day or two, it gets really runny. I have no idea why; does anyone else have this problem? ( I know, I know...make less and use it tight away....hard to,do since I'm one person. Sigh,

This is not only the easiest blue cheese dressing I've ever made, but also the creamiest!  I usually always make Paula Deen's Lady and Son's Blue Cheese Dressing which is very good, but it always gets very thin after 24 hours of sitting in the fridge.  I crumbled another 4 ounces of blue cheese after processing it because I like it chunky and not mayonnaisey.  (Couldn't find roquefort at my regular grocery store so used gorgonzola.

My guests were amazed at the homemade blue cheese dressing. I used red wine vinegar. It was delicious and very easy to prepare.

This dressing is awesome! I think it is the tarragon vinegar that does the trick (and some high quality blue cheese, don't skimp on this!. I put it on a salad of chopped romaine hearts and arugula and I couldn't stop eating it. It was a little thicker than I like so I just thinned it with a little milk.  

I ended up adding in an extra 3 oz of blue cheese as I didn't have very strong blue.  The dressing is exceptionally thick but such a great change vs others that poured &amp; then were runny the next day!  I also tossed in some chives as I'd cut them for another recipe &amp; had leftovers. I doubt I'll ever buy blue cheese dressing again!

This is the best Blue Cheese Dressing EVER!  I added a tsp. minced garlic.  I'm addicted to this dessing!

Made the dressing to serve with prime rib.  Delicious! Most of the other recipes I've tried call for buttermilk, but I went with the cream as stated in this recipe and it turned out great!  Used the rest of it for buffalo wings the next day.

Absolutely delicious! I followed the recipe except I used 1 cup buttermilk in place of heavy cream,  3/4 cup mayo, 1 tbs. of sour cream and 3 tbs.of tarragon vinegar. Will make this salad dressing again, thanks Ina.  

Absolutely delicious dressing for salad or with wings.  I use 0% fat greek yogurt instead of heavy cream.  You will NOT miss the cream b/c blue cheese is SO flavorful. Then you almost COULD drink it (but I don't. Thanks Ina.

I've never made my own blue cheese dressing... THIS IS THE BEST BLUE CHEESE DRESSING I'VE EVER TASTED! I love tarragon vinegar so that got my attention when researching recipes... So excited, can you tell? This will be my go to...

I made this earlier today, tastes wonderful! ...SO EASY!  I added a smidgen more roquefort and black pepper, and just barely under 1 teaspoon of salt...I added it to taste towards the end of mixing.  The flavor is rich and well rounded due to the touch of vinegar.  So much better than any blue cheese dressing I have purchased from grocery stores.   

This is delicious as a salad dressing or as a dip for veggies &amp; buffalo wings.  I've used white balsamic vinegar when I didn't have tarragon vinegar on hand, and it was just as good.

I make this all the time and I also used half-n-half because it's what we keep in the fridge. I hate tarragon so it doesn't go in any food I make - but otherwise..follow the directions as it's SO good you could eat it with a spoon!  

This was wonderful. I cut the recipe and half and had perfect flavor. A little thick. I proceeded to add cream to thin it out. DON'T! I ended up over whipping it and had blue cheese whip cream.  Follow the recipe!!! 

Flavor is great but mine was too thick; I used champagne vinegar with dried tarragon and my roquefort was a brie style, maybe that was the problem.  Also, I used low fat mayo, I know - why.  I've been watching my weight.  Won't substitue this in the future, you need the real deal.  Thanks for the tip on using milk instead of cream, that may help me.

This is the best bleu cheese dressing EVER.  Not too thick, not too thin and allows the bleu cheese to shine.  This recipe makes alot of dressing, cut it in half for approx. 3 liberal servings.  I do not like the flavor of tarragon, and substituted rice wine vinegar, the finished product was delish!  Watch the salt, do not add until you have tasted, mine needed only 1/4 tsp of salt for a half recipe.  

I had a little left over greek yogurt that I needed to used up, so added that.  I live in Iowa so always have Maytag in the frig plus taragon vinegar is a staple in my pantry.  I didn't have cream so used whole milk.  Took advise of readers and waited to add salt at the end, plus didn't put in the food processor because I like the chunkiness.  Does make a lot, but I know it will get used up in the following week.  Great recipe that I will use again and again.

I've had a lot of Blue cheese dressing, and this is by far my fav!!  I used Champagne vinegar instead, and a little more blue cheese!! You can never have to much blue cheese!

This was awesome! Okay, so I was out of actual bleu cheese but I had gorganzola. No tarragon vinegar, either. I did have red wine vinegar. Guess what. The dressing was still great! It is true, Ina will never steer you wrong! I stopped buying bottled dressing years ago. This was a welcome change to the usual vinegrette.

i made this for a small dinner party i had with my girfriends on a week night.  one gal said she really didnt like blue cheese but she would try it.  all my friends raved about it and i thought I was a rock star.   after i finished it i thought...how easy was that????  thanks ina for another great receipe

Be sure to use this recipe for the dressing as opposed to the more recent one on food network. This is not paste, is light and delicious and will work every time!

I loved this dressing.  The thing I was concerned most about were the calories.  Cream and Mayo, well, the best ingredients always make the best recipes.  I just ate very little and was quite satisfied.  

This recipe is fantastic! I made it for my husbands birthday party and put it over steak pitas and it was a huge hit! Who says dressing is only for salads! I even used a blender instead of a food processor! Tasted fantastic! Thanks Ina!!!!

I really enjoyed this blue cheese dressing, I made just the dressing for the salad I made for my family.  Everyone loved it.  It's creamy and not overpowering.  Will be a keeper.

Great recipe - roquefort's pretty salty, so add salt a little at a time to taste.  Will try other reviewer's recommendation re: using milder blue cheese (just for a little variety.)

This is a great recipe!  However, it does make more than 4 servings.  It's really more like 8.  Next time I'll just half the recipe because now I got way too much.

I agree with all of you that rated this with 5 stars. I have eaten in some of the best steak houses Los Angeles has to offer and I am not exaggerating - this dressing beats them all. Easy to make (I tried Ina's version and the buttermilk version one of the reviewers suggested) without a doubt stick to Ina's version. Full of that rich Blue Cheese flavor that you expect from Blue Cheese dressing. After setting for awhile it thickens up beautifully. It's a keeper for sure. Thanks for sharing Ina.

My family and I love this salad dressing. As another reviewer commented, be sure and watch the amount of salt you add due to the amount of bleu cheese in the recipe.  This is also good as a vegetable dip and as a dip for fried/baked potato wedges.

This is good but mine is better.  My recipe calls for buttermilk and sour cream in addition to the mayo and cream.  Adds a nice tang.

This was tasty, and so easy to make with ingredients I usually have on hand.  I used half and half instead of heavy cream, and it tasted just fine.  It was a little thin, so next time I'll probably add a bit more mayonnaise or possibly some sour cream to thicken.  Ina, you are the BEST!

I made this last night to accompany a grilled New York Strip steak...yummm!  Tomatoes are in season now and I could easily make a meal of the iceberg and tomato with the delicious dressing...maybe a little crispy pancetta on top!!

EVERYONE LOVED IT!!!! I have tried other dressing recipes that were a disappointment, but this....outstanding!  Also, I like the tip on cutting the green leaf lettuce in 1/2 and swinging around in a towel to dry.  I am always in a hurry and end up with wet lettuce. Besides, its lots of fun and makes a nice presentation! Thanks for the tip.

This is the best dressing! I love Blue cheese dressing but Have always found it difficult to find a resturant quility for home. This was soooo Easy to make. However the taste gets stroger every day so use quickly or if you don't like a strong blue cheese taste use less blue cheese.

Loved this, but not the calorie count! So, I substituted lo fat buttermilk for the cream and also eliminated the vinegar. It was just as good. Next time I will also reduce the amount of salt too.It's important to use a good quality bleu cheese.

I am thrilled to have a recipe for a beu cheese dressing that is as good or better than the kinds available at the restaurant! I prefer the old maytag bleu but imagine all the other varieties would give incredible results.

I think I may need some suggestions!!.  We live in a very small town and to come across Tarrogon vinegar was impossible.  I tried to make my own.  My dressing turned out very thick, almost like a dip.  I would try this again, adding more Blue cheese, and finding some real Tarrogon vinegar, I think it has definate potential.

Fast, easy, delicious! Love Blue Cheese dressing pretty much anywhere, but this is my true favorite..right here at home. Wouldn't change anything with this recipe.
