Step 1

To make the salad: In a medium bowl mix the avocado, zucchini, cucumbers, and fresh mint. Add the lime juice and stir to mix well. 
Serve immediately on a plate and top with the shredded beets. Add the dressing to your taste.

Step 2

To make the plum dressing: In a food processor, combine all ingredients. Puree until smooth and emulsified. Season with salt and pepper. Transfer the dressing to a small bowl, cover and refrigerate until ready to serve.
