Simply the best chicken marinade for any occasion. Works wonderfully on top of a salad.

Grilled Chicken Marinade

red wine vinegar

soy sauce

olive oil

parsley flakes

basil

oregano

garlic powder

black pepper

skinless, boneless chicken breasts,

Whisk vinegar, soy sauce, olive oil, parsley, basil, oregano, garlic powder, and black pepper together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, at least 4 hours.


Preheat grill for medium-low heat and lightly oil the grate. Drain and discard marinade.


Grill chicken on the preheated grill until no longer pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Even though I sample as many different recipes for marinating chicken, I usually end up falling back on AR's "Pretty Chicken Marinade", but I liked this one almost as much. For not having to chop anything, and for typically having these ingredients on hand, it was easy and the end result chicken was flavorful w/o screaming "herbs!" or "soy sauce!"

Excellent!  I had one chicken breast left over from our previous dinner, so I grilled this one as written with the exception that I didn't slice the chicken.  I'd think that had I thinly sliced the chicken and cooked it for that long on each side that it'd have been way overcooked.  As it was, this was wonderful!  This time I cut the recipe to 1 serving, but I almost wish I had a little more marinade that I could save off before adding the chicken so that I could drizzle it over some of the side dishes.  I'll do that next time.  You don't need to change a thing in the proportions of this recipe!  Thanks, Jennifer!

This was delicious. I didn't have red wine vinegar so I used cider vinegar instead.  I eyeballed the spices vice measuring them.  This recipe seems like a very forgiving marinade.  I used it on chicken and marinaded for approx 7 hrs.  The chicken was tender and moist.I highly recommend this recipe.

Completely exceeded my expectations. I usually feel like marinades just burn off during cooking and you end up with bland chicken. Not this one! Great flavor after grilling and very juicy! I let it marinate for about 4.5 hours. Also, I didn't have low sodium soy sauce, so I used slightly less than called for of the regular stuff (just added a teensy bit more vinegar instead) and it wasn't too salty at all. Don't be put off by the soy sauce taste if you try the marinade when you first mix it up, the finished product tastes wonderful!

Doubled this recipe for 12 bone in thighs. Easy to measure into a jar then shake well to blend. I saved a small bit to drizzle over grill baskets of vegetables. Thank you Jennifer for a wonderful recipe!

This is so delicious!! This is my first time cooking with red wine vinegar and I’m not gonna lie, I was nervous about using it after smelling it. But after mixing all of the ingredients together, I could tell this was going to be good. I cut the recipe in half and marinated two thin sliced chicken breasts in a zip loc bag in the fridge for about 15 hours, then I baked them at 400° F for about 20 minutes. The chicken is so soft and flavorful! I can’t wait to try this on a steak too. Thank you so much for sharing! I’ll definitely be using this a lot.

This was ok but I’m astonished at the five star reviews.  I found it bland.  At least the leftovers will be easy to use since the flavor isn’t very strong. I did change it a bit, mostly to add a little more flavor after I tasted the marinade. I doubled the garlic and added a touch of onion powder.  I didn’t have parsley, but I’m not that fond of it, so I did increase the basil and oregano slightly.  I guess if you had strong tasting sides it would be a good mild addition.

Wow what a great recipe. Made exactly as written. Allowed the chicken to marinate for about 6 hours before doing in the oven. LOL did over cook the breasts but I did find the centre was moist and full of flavour. Will be doing again. Thank you Jennifer for such a wonderful recipe.
