I came up with this recipe because I could not find a recipe I was looking for. A very simple, easy, and quick dish to put together. I always make this for myself when I grill steaks for my family.

Grilled Cod with Spinach and Tomatoes

(4 ounce) fillet cod

salt and black pepper

garlic powder,

spinach,

¼ tomato, seeded and diced

onion

olive oil,

balsamic vinegar,

mozzarella cheese,

Preheat an outdoor grill for medium-high heat.


Place cod on a piece of aluminum foil and season with salt, black pepper, and garlic powder. Top cod with spinach, tomato, and onion; season again with salt and black pepper. Drizzle olive oil and balsamic vinegar over cod and top with mozzarella cheese. Fold foil over cod creating a packet, crimping the edges together making a seal.


Cook on the preheated grill until fish flakes easily with a fork, 7 to 9 minutes.


Since it is winter in Michigan and dark thirty when I get home from work I decided to do this in the oven. The directions say to grill in foil so I didn't see a reason why oven would be much different. Turned out well and was also perfect for a light lunch the next day. I think this would have been great with fresh basil instead of spinach for a little extra flavor.

I, too, baked it instead of grilled. Omitted the cheese, used fresh chopped garlic and added basil. Served on top of mashed potatoes & roasted asparagus. Will definitely make this again.

Really liked this, so healthy and light.  I know people hate when you change recipes, but I had a similar recipe that I lost and used this to recreate it.  I really used this recipe, but my former one had zucchini in it so I added that.  Here's what I did..foil packets, sliced zucchini in rows, fish on top of that, then what the recipe called for with the tomatoes, spinach, onions.  Same spices and olive oil and balsamic.  My cod was quite thick so I baked (didn't have access to grill) it at 400 degrees for 20 minutes.  Some people mentioned it gets too "saucy" and they may not like the added zucchini for that reason but we liked it.  Only when I served it, I put a little feta on it.  That's my version and it was delicious, light and healthy, so I thank the original poster of this recipe.

Great, tasty, and oh so simple recipe! Excellent choice for a weeknight, as suggested! I followed the recipe, except doubled the fresh spinach and used fresh minced garlic.  Next time, I want to try Swiss  or some other mild, soft cheese that has a bit more flavor than mozzarella (which didn't add much to the dish, in my opinion).  I'm thinking Swiss or Jarlsberg because they would add a buttery, nutty flavor that would likely pair well with the other ingredients. Will definitely make again!  Thanks!

Flavors are fantastic!! Made as described with the topping with the exception of swapping in feta cheese for mozzarella.. One note - also does wonderfully with chicken in the oven just with the longer baking time for chicken vs. fish I browned chicken breasts in a skillet first and finished in the oven in a 13 x 9 pan covered in foil.

Absolutely delicious! Thank you for sharing this recipe TSASI! I had no spinach so used fresh basil leaves and it was so good!

Tried it and not a family favorite - they thought the fish tasted more boiled and baked.  Leftover the next day was better but would change things up.  Add a layer of onions and garlic on the bottom first then place the Cod, top with spinach, tomatoes and cheese.  Bake open not like a packet

Made this last night and it was delicious!  Just sprinkled on the balsamic and I didn't seed the tomatoes.  Very healthy!

Very tasty easy and quick to make. Looks great on the plate. Also it provides a nice base to experiment a bit with some additional flavors - maybe basil ginger oregano.
