Step 1
Preheat a skillet or grill pan on the stove over medium heat.
Step 2
Brush olive oil on one side of each slice of bread. Evenly divide the hummus and spread onto the opposite sides of all four slices.
Step 3
Layer the cucumbers and olives onto the hummus on two of the bread slices. Top the cucumbers with the two remaining slices of bread, oil side up.
Step 4
Place sandwiches into the preheated skillet. Cook about 4 minutes on each side or until the bread is crispy and golden.
