Step 1
In a bowl, combine all of the ingredients. Refrigerate until ready to serve.
Step 2
With the rack in the lowest position, preheat the oven to 425°F (220°C).
Step 3
On a work surface, cut the pitas in half and open into pockets.
Step 4
In a large bowl, combine all of the ingredients except for the oil. Season with salt and pepper. Spread about ¼ cup (60 ml) of the beef mixture inside each pita half. Press down lightly to stick the pita to the meat filling.
Step 5
Using a pastry brush, cover the outside of the pitas with the oil. Place the stuffed pitas on a non-stick baking sheet, evenly spaced out (see note).
Step 6
Bake for 10 minutes, turning the sandwiches over halfway through, or until the pitas are golden and the meat is cooked through.
Step 7
On a work surface, cut the sandwiches into triangles and serve with the spicy yogurt. Serve with a green salad, if desired.
