Step 1
In a large pot over a medium-high heat, add the olive oil and allow to heat.

Add the onions and garlic and fry for 2 - 3 minutes, or until onions are soft and translucent.
Step 3
Add the celery and carrots, and cook for a further 2 - 3 minutes, or until softened slightly.
Step 4
Add the remaining vegetables and the dried oregano, dried thyme, bay leaves, and seasoning.
Step 5
Bring to a boil and then simmer gently for 45 minutes.
Step 6
Add the garden peas just before serving and then enjoy!
