To make the Indian Spice Rub stir together the cumin, ground coriander, cardamom, garam masala, cinnamon, salt and pepper in a bowl. Use ¼ cup of Indian Spice rub on the chicken breasts until they’re fully coated. Heat a medium sized skillet over medium-high heat with coconut oil. When the oil is hot, place the chicken breast skin side down and fry for about 3 minutes on each side. Place the chicken breasts in a small baking dish and bake in the oven for about 8 minutes. Slice and serve with fresh lemon juice, lemon zest and chopped cilantro.
