Step 1
Add your beef and cans of deviled ham to a bowl. Crush your saltine crackers into a fine crumb and add to the bowl.
Step 2
Add the milk, eggs, grate your onion on a cheese grater and add that, then add the pepper, onion powder, parsley, dry mustard, combine well but do not over mix. The meat mixture will be slightly wet.
Step 3
Form the meat mixture into 2 inch balls and add to a casserole dish. heat your oven to 375 degrees and add your meatballs and let cook for 10 minutes or until they are slightly but not fully cooked.
Step 4
While the meatball par bake, add your ketchup, Worcestershire, brown sugar, mustard, and beef consommé to a skillet or sauce pan. Bring to a boil, reduce heat and simmer 20 minutes until thickened. Make sure to whisk often so it doesn't burn. When it is thickened to a glaze texture, remove from heat.
Step 5
After the meatballs bake for about 10 minutes and are slightly browned, carefully remove from oven and pour the sauce over the ham balls. Bake at 375, uncovered for 35 minutes.
Step 6
Remove from oven, let rest for ten minutes and serve with toothpicks.

You can make this ahead of time and reheat. You can also freeze the ham balls unbaked and thaw and make the sauce and bake.
