Step 1
Chop the potato into chunks, then drizzle with the thyme, olive oil, a the juice of half the lemon.

Put the potato in the air fryer and cook at 200C | 400F for 15 - 20 minutes until crispy and golden. Give the potatoes a shake halfway through cooking.

While the potatoes are cooking, you can make the harissa butter beans.
Step 4
Start by heating the olive oil in a pan, the add your sliced garlic.
Step 5
After about a minute, add the harissa paste and butter beans and stir together.
Step 6
Next, pour in your chopped tomatoes, the water, and peppers, and add your seasonings.
Step 7
Allow everything to simmer for 15 minutes or until the sauce has thickened.
Step 8
Serve the beans with a spoonful of creme fraiche (I used a vegan creme fraiche for the meal pictured!), fresh chopped parsley, crispy potatoes, and lemon zest.
