These tasty, protein-packed hash brown egg white nests are a great way to start your day off right, and an easy make-ahead breakfast!

olive oil spray

onion (minced)

potatoes (I used frozen Simply potatoes)

garlic powder

salt and pepper

onions

bell peppers (diced)

oz reduced fat Swiss cheese (chopped)

turkey ham (or regular ham, diced)

Egg white

Garlic powder is ground, dehydrated garlic. It is a very common seasoning. Applications include pasta, pizza, and grilled chicken. Garlic salt is simply salt plus garlic powder. (Pre-made products usually include an anti-caking agent.) Garlic powder is a common component of spice mix. It is also a common component of seasoned salt.

Turkey ham is a processed food made primarily from cooked or cured turkey meat and water, formed into the shape of a ham and often sold pre-sliced.

Preheat oven to 375F°. Lightly spray a nonstick 6-muffin tin with oil spray. 

Combine potatoes, 1/2 cup onion, garlic powder, salt and pepper. Fill each muffin tin with 1/4 cup of potatoes and press along the side of the tin so that it forms a nest.

Bake 35 minutes or until golden brown and edges are crispy.

While nests are baking, combine the egg whites with remaining ingredients in a medium bowl.

Remove nests from the oven when golden brown.

Fill each cup with about 3 tbsp of egg mixture. Return to the oven and bake an additional 17-20 minutes or until eggs are fully cooked.

These are great!  Add a little fruit in the morning and you're good to go.  Using a silicone muffin tin makes removing much easier.

The hash browns kind of stuck to my muffin tin.  I think I'll try making this with liners next time.  Nice, easy, make ahead breakfast!

I added Pancetta.

Made these for the first time last night and popped in the air fryer this morning to reheat. So good! We did put a few in the freezer and will try reheating those in the air fryer, too.

They were absolutely delicious, no surprise since your recipes usually are.  Mine weren’t as pretty as yours and took a little longer to cook but I will definitely make it again.

Tasty, but what a mess. Even with well oiled muffin tins, these still stuck and tire apart.

This recipe is great!! My only complaint is that it said 35 minutes to cook (at the top of the recipe) so I thought I’d have enough time before school this morning. I didn’t notice until reading the recipe that it’s 35 minutes for the potatoes to cook, then another 17-20 minutes after, so that part was a little misleading.
