Step 1

Preheat the oven to 350 degrees F (17 degrees C).

Grease two 9x5 loaf tins with cooking spray, butter, or oil, and line with parchment paper.

Step 3

Mix the flour with the salt, baking soda, sugar, and cinnamon in the large mixing bowl.

Step 4

Lightly beat the eggs in a small bowl and drain the pineapple.

Step 5

Chop the walnuts and cherries and mash the bananas.

Step 6

Add the chopped walnuts, beaten eggs, oil, mashed banana, drained pineapple, vanilla, and cherries to the large bowl with the flour.

Gently stir the batter together, folding from underneath and scraping the sides of the bowl with a spatula.

Only stir until combined, being careful not to over-mix.

Step 9

Divide the batter between the two prepared loaf pans.

Bake for 60 minutes, checking after 50, or until a toothpick comes out clean.

Allow the loaves to cool for 10 minutes before turning them out onto a wire rack.
