Preheat Oven: Preheat your oven to 425°F (190°C).

Prepare the Sauce: Spray a 9X13 pan with cooking spray. Pour in the chicken broth, soy sauce, brown sugar, and minced garlic. Whisk together until the sugar is dissolved and the sauces are fully combined.

Assemble the Casserole: Add the uncooked rice and bite-sized chicken breast pieces to the casserole dish with the sauce. Pour the pineapple tidbits (including the juice) over the chicken and rice. Add the chopped red bell pepper on top. Stir all the ingredients together making sure the chicken pieces are covered. (add a little bit of broth if necessary.
Step 4
Bake: Cover the skillet or dish tightly with aluminum foil. Bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through, the rice is tender, and the liquid is absorbed.
Step 5
Garnish and Serve: Remove the foil and fluff the casserole with a fork. Garnish with chopped green onions before serving.
