Step 1
Heat the oil in a large frying pan over medium heat. Add the celery, brown onion, carrot, capsicum and garlic. Cook, stirring often for 8-10 minutes or until the vegetables are tender.
Step 2
Increase heat to high and add the mince. Cook, breaking up the mince with a wooden spoon, for 5 minutes or until browned. Stir in the tomato, stock or water, tomato paste and Italian herbs and bring to a simmer. Reduce the heat to low and simmer for 15 minutes. Season.
Step 3
Divide roll bases among serving plates. Top with lettuce leaves. Top with mince mixture, pickles and red onion. Top with the bread tops and serve with chips.
