Preheat an air fryer to 375°F

Step 2

Mix rice flour with sea salt and pepper to taste in a medium bowl

Step 3

In another medium bowl, beat the egg

Step 4

In a third medium bowl, mix together quinoa flakes, flaxseed meal and nutritional yeast

Step 5

Evenly coat chicken breasts in flour mixture, shaking off any excess

Step 6

Dredge chicken in the egg mixture and then in the quinoa mixture, coating evenly

Step 7

Brush chicken with olive oil, coating evenly

Step 8

Cook in air fryer for 10 minutes, or until golden brown and cooked through

Step 9

Spoon 1/3 cup of tomato sauce over each chicken breast and garnish with a basil leaf (if using)
