Step 1

Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.

Step 2

In a bowl combine 230 ml Skimmed milk, 1 Egg, 2 tbsp Coconut oil, 1 tsp Vanilla extract and 75 g Liquid sweetener.

Step 3

In a large mixing bowl, add 120 g Plain flour, 120 g Oats, 1 pinch Sea salt and 1 tbsp Baking powder.

Step 4

Add the milk and egg mixture and combine well.

Step 5

Add 200 g Blueberries and mix in.

Step 6

Divide the batter into a greased muffin tin and put into the oven for 20 minutes.

Step 7

Allow to cool slightly before transferring to a cooling rack.
