Step 1
In a small saucepan over low heat melt the coconut oil and maple syrup together until combined. When the mixture is hot (but not boiling), whisk in the gelatin until it dissolves completely. Make sure you are really whisking as you add the gelatin to the saucepan or it might clump.
Step 2
When the mixture is all combined pour into a large mixing bowl and immediately add the rice puffs stirring until all the puffs are coated with the syrup mixture.
Step 3
Spread out puffs into an 8x8 (square) greased pyrex dish and press out flat. Put pan in fridge and let the treats set for 15 minutes.
Step 4
Cut into squares and enjoy!
