Step 1
Place a non-stick frying pan over a medium-low heat and add thebutter. Thinly slice the garlic, add to the pan and cook gently forabout 2 minutes until softened but not browned.

Meanwhile, finely chop all of the herbs and set aside.

Lightly beat the eggs in a bowl and stir in three-quarters of theherbs. Pour into the pan and crumble in three-quarters of the feta.Cook gently while stirring all the time until the mixture is just set –you want soft, silky curds.
Step 4
Plate up, or pop straight on top of some toast. Finish with theremaining herbs and feta, the smoked paprika and a good drizzle ofolive oil.
