Step 1
Preheat oven to 375°. Prepare 2 muffin tins by filling them with paper muffin liners or spray the pans with non-stick cooking spray.
Step 2
Melt butter and mix together with the brown sugar and protein powder. Add the applesauce and stir in.
Step 3
In a separate bowl, use a hand mixer to beat the egg whites until stiff. This should take about 3-4 minutes. Fold in the yogurt and gently mix just until combined.
Step 4
Add the butter/brown sugar mixture and use a spoon to mix just until combined.
Step 5
Fold in the Kodiak mix and the oats and mix just until combined.
Step 6
Gently fold in the berries. Scoop batter into the prepared muffin tins. I like to use a muffin scoop (large cookie scoop) to evenly portion the batter, but you can use a spoon to fill the muffin pans. Each muffin cup should be about 2/3 full.
Step 7
Bake for 25 minutes or until a toothpick inserted in the middle comes out clean. Let cool in the pan for about 5 minutes and then transfer the muffins to wire racks to cool completely.
