Step 1

Heat up mustard oil and fry off bay leaves and cumin seeds..

Step 2

Marinate the chicken cubes with turmeric powder, chilly powder, coriander powder, cumin powder, asafoetida powder,ginger paste and oil.Ideally let the chicken sit in the marinade for overnight or at least for 2 hours.Heat up a vessel, pour vegetable oil.When the oil is hot, add bay leaves and cumin seeds.Let it fry for a minute and add 1/2 a teaspoon of asafoetida powder.Cook the spices on slow fire for a minute.Add marinated chicken and stir fry for 2 minutes.Stir fry until all sides are seared well.Then add 1 cup of chopped tomatoes and cook for 5 minutes.Add one teaspoon of crushed chilly.Cook on a slow fire till the oil starts to release from the sides of the vessel.Add water if needed (add water as per your desired consistency).Adjust the seasoning.Serve with boiled rice or any bread of your choice.
