Step 1
Dice the red peppers and onions and add to a small skillet or omelet pan with a little olive oil and let simmer on medium to medium-high heat for 2-3 minutes.
Step 2
While the peppers and onions cook, crack the eggs into a separate bowl. Add the oat milk, salt and pepper and beat together with a fork until smooth.
Step 3
Remove the peppers and onions from the pan and set aside. Add some more olive oil to the pan and pour the eggs into the skillet. Let the eggs cook over medium-low heat. Put a lid over the pan so that the eggs cook on both sides. Let cook for approx. 3-4 minutes.
Step 4
Add the peppers, onions and cheese to the omelet, cover again with the lid and allow to cook for an additional 3 minutes or until the eggs are cooked.
Step 5
Carefully fold the omelet in half, remove from the pan and place on the plate. Top with additional vegan cheese or veggies and enjoy!
