Holiday Brunch Casserole

hash brown potatoes, thawed

pork

bacon strips,

green pepper, chopped

green onion, chopped

cheddar cheese, divided

eggs

2% milk

biscuit/baking mix

salt

I made this recipe the day after Thanksgiving for breakfast. Was awesome and easy to put together.

Very good but  I found it needed to cook longer more like 50 minutes to 1 hour.

Good basic recipe have made many times but I brown the Hashbrowns in a skillet to give them more taste as well as sautee the veges before adding.  We also sub mushrooms for the peppers for our taste.

I've made this many times over the years.  One of my favorites.  My daughter needs to eat GF so I substitute a GF baking mix (several brands out there) and it turns out awesome.

Very good. Pretty easy to put together.  Of course, love to prepare the day before. As most said, did have to cook a bit longer that stated. As for the person that complained about having to cook longer and then the top burnt, if top was getting to brown, why did you not just cover with foil to keep from burning? and, as for saying the has browns were slimy, did you get them good and dry before combining them with the other ingredients? And, if you have never cooked before, I am sorry for making it sound like you should know those things.  Very tasty, will make again.

I really liked this hearty casserole. It had just the right mix of flavors and was very filling. I used whole milk and regular baking mix because that is what I had on hand. I agree with others that I had to cook it quite a bit longer than 35 minutes, at least 50 minutes. We only got eight servings from it. My holiday guests raved over it, so I will definitely make it again.

This is the best overnight breakfast casserole I've ever made! - I did not cook hash browns ahead of time as others have commented. I thawed in refrigerator all day then squeezed all of the water out of the potatoes with paper towels before using. - I used Maple flavored sausage. - Used green and red bell pepper.   Added the bell pepper and green onions to the sausage after no longer pink. Cooked until soft. - Used 3 or 4 green onions instead of 1. - Used 7 eggs instead of 4. - Added a few tablespoons of extra Bisquick because more eggs. Also, could not find reduced fat mix so used regular Bisquick.   Not sure why they call for reduced fat mix. - Added 1 teaspoon of dry mustard. - Added pepper. I had to cook for an hour. Put aluminum foil on the casserole at about 40 minutes so the top wouldn't burn. Everyone will love this recipe!

Our family loves a hearty, comforting breakfast dish and this fits the bill. Love to serve this for a nice event, like the holidays. We used the "hot" versus mild bulk sausage. This turned out nice and fluffy for us. I did squeeze out potatoes before using.

Fabulous.  We actually made this for dinner.  We had just come back from a quick trip and needed something easy to make for dinner.  I had all the ingredients on hand and it worked out wonderfully.  The left overs were used for breakfast burritos the next morning.

This is a delicious and super easy breakfast casserole! I love that you can make in the evnening and then finish it off real quick in the morning. It is a nice mix of textures.  I happened to have cheddar biscuit mix on hand which added an extra fun little flavor to the dish.

Wonderful taste!  No complaints.  I do think the ingredient of reduced fat biscuit mix is amusing, amidst all the other ingredients, lol.

I have been using this recipe for years.  I have always used hot Italian sausage instead of breakfast sausage.  My family looks forward to special days just so they can have this for breakfast.

I made this for Christmas Morning. We all loved it. I did add to the baking time, as some of the batter did not seemed cooked through. I probably baked it closer to 45 minutes. I think that, next year,  I will pre-cook the hash browns to make them a little more golden - just my personal preference. Thank you for the recipe.

This is an awesome breakfast casserole.  This is our traditional Christmas breakfast.  We look forward to this every year.  It is so delicious and easy to make.  I use red pepper instead of green and saute all the potato, onion, peppers together first.  I also add more that one green onion.  Just use whatever onion you have on hand.  I double the eggs and use 8.  Keep it covered with foil until the last 10 minutes of baking, remove the foil and finish baking so the cheese doesn't get too browned.  Wonderful breakfast and leftovers are great too.

I dont like casseroles.  I make them for hubby.  This is the second time I made this recipe.  First time I cut it in half and followed the recipe exact.  Second time I did what some commenters suggested.  First, I did the bacon in the oven.  Then I threw on 4c hashbrowns in the same baking sheet as I did the bacon thus utilizing the bacon grease (not all of it) to cook up the hashbrowns.  The HB keep cooking even after you turn off the oven and they are still white.  Then I fried up some Johnsonville sausage patties but I only had half a package so I probably didnt use enough sausage.  Then I dumped the sausage out of the lg fry pan, dumped in some more bacon grease, and sauteed the onions and green peppers on low heat while I did the bread mix.  I used a box of Jiffy corn bread this time bec that is what hubby prefers.  Forgot to cut up some garlic because the onions were really getting to me and I had to take the garbage out to get rid of the smell so I used some garlic powder.  It baked up in 35min though I think when you use bisquick it does take longer.  When hubby wakes up he can tell me if he likes the changes I made.  Always use whole milk

Much love for this from our family. I like to add a can of diced Hatch green chiles as well. I do agree that sauteing is a good idea, as mentioned by waleskaj. I haven't tried doubling the eggs though. I wonder if you do this - what are anyone's thoughts of omitting baking mix?

I make a recipe just like this w/out the green peppers,  I feel the peppers take over the casserole.  We have  it every Christmas breakfast LOVE IT!!

I recently made this delicious recipe for my group and had rave reviews.  They loved it and I loved it.  I love that you can get it ready overnight and pop it in the oven the next morning while I'm getting ready.  Easy and delicious, this is a winner!  I will be making it again and again :)

This is an awesome, easy way to feed a crowd in a hurry. I've made it in the crockpot also

Have been making this for several years now and the family loves it! Have tweaked it over time to suit our taste by swapping O’Brien potatoes for regular hash browns (we like a bit of peppers and onions), and adding 1/2 lb of cooked bacon, crumbled, 1/2 tsp onion powder, 1/2 tsp garlic powder, and 1/2 tsp dry  mustard.  Always takes almost an hour to bake as mentioned by another reviewer. I also use gluten-free Bisquick for family members with celiac, and it’s still great!

Oh my gosh, made this last night for the office holiday potluck this morning.  The dish is totally gone!  Everyone marveled about it.  I did substitute seasoned salt for the regular salt, added pepper, didn't have green onions and used a half of a yellow onion.  I couldn't find the low-fat Bisquick and used Hungry Jack buttermilk pancake mix instead.  I baked it for about 40 minutes.  I'm  definitely making this again for Christmas morning for the family.

I am planning to make this for Christmas morning. Has anyone precooked shredded hash browns and layered them on the bottom of the casserole ?

Excellent!  I have several meat loving men to feed so I added extra sausage and bacon.
