Preheat the oven to 375°F and line a baking sheet with parchment paper.

Wash potatoes and cut potatoes into thin fries (I prefer ¼” thick).

Let potatoes soak in cold water in a bowl for at least 30 minutes. Remove from water and dry very well with a paper towel.
