In a large bowl, combine the diced peaches, tomato, corn, onion, jalapeno and basil.

In a measuring cup, whisk together the lime juice, olive oil, honey and salt. Taste test to see if you prefer a sweeter flavor and add more honey, as desired.
Step 3
Pour the honey-lime mixture over top of everything in the bowl. Stir to combine. Serve immediately or refrigerate for up to 2 hours before serving. Leftovers will usually hold up for 1-2 days depending on how ripe your peaches and tomato are, however the salsa is best when eaten the day of.
