Extra-virgin olive oil and lemon juice are the backbone of this dressing, but it gets a unique toasty flavor from tahini.

Honey-Tahini Dressing

lemon juice

olive oil

tahini, (see Tip)

honey

garlic,

salt

pepper,

Combine lemon juice, oil, tahini, honey and garlic in a blender, a jar with a tight-fitting lid or a medium bowl. Blend, shake or whisk until smooth. Season with salt and pepper.


Yum! This recipe is a good base and easily modifiable if desired...as others have commented. Healtify it if you must but it's a keeper, regardless. I don't consume honey so used maple syrup instead. I added one extra garlic clove and a tsp of white miso, which reduced the amount of salt needed. Also, added water to thin some. Some turmeric or ginger would've been nice too.


@ hrbdoctr. There are good and bad fats. Mainstream media has everyone convinced they're all bad and a low fat diet is healthy. The fact is the average person doesn't get enough good fat.

i found this recipe under the title, HEALTHY SALAD DRESSINGS.  how can one tablespoon of a dressing equalling six grams of fat be healthy?

i never could figure out why people use olive oil AND tahini.  tahini itself has so much oil in it there is no need to add more.  

why not try water instead?
