Step 1
Place a bowl onto mixing bowl lid and weigh shiitake mushrooms into it. Cover with boiling water and set aside to soak for 20 minutes. Drain mushrooms and set aside.

Place lemongrass, coriander, chillies, Kaffir lime leaves, tomato, ginger, garlic, galangal and eschalots into mixing bowl and chop 4 sec/speed 10
Step 3
Scrape down sides of mixing bowl with spatula and chop 4 sec/speed 10.
Step 4
Add stock paste, water, tom yum paste, fish sauce, sugar and drained mushrooms and cook 8 min/100°C/speed 1.
Step 5
Add prawns and cook 3 min/100°C//speed 1.
Step 6
Add lime juice and stir using spatula, then divide between 4 serving bowls. Garnish with shredded spring onion/shallot and extra coriander leaves just before serving.
