Preheat oven to 250°F.
Step 2
Scrub potatoes (do not peel them). If you want, dice your potatoes into 1” cubes for faster cooking.
Step 3
If you diced them, soak potatoes in cold water for up to 1 hour. Drain and dry potatoes, if required.
Step 4
Toss potatoes, olive oil, herbs, and seasonings
Step 5
Place on a baking sheet and bake your whole potatoes for 3 hours and 30 minutes or diced for 2 hours and 15 minutes at 250 degrees F until browned and tender.
