Step 1
Preheat the oven to 350°F. Set aside a baking sheet lined with foil and sprayed with nonstick spray.
Step 2
In a large mixing bowl, add all of the meatloaf ingredients and well incorporate them with clean hands. On the prepared baking sheet, shape the meatloaf mixture into an 8" × 4" loaf.
Step 3
Bake your 2 lb meatloaf for 45 minutes, then remove it from the oven and raise the heat to 400 degrees.
Step 4
Whisk together the topping ingredients, then spread over the meatloaf and cook for 10 to 15 minutes, or until the internal temperature reaches 160 degrees.
Step 5
Allow the meatloaf to rest for 5 to 10 minutes before slicing. Enjoy!
