Step 1

Place the rice in a fine mesh sieve. Rinse under cold running water, gently swishing with your hands, until the water runs clear. Allow to drain thoroughly.

Step 2

In a medium saucepan, combine the rice and oil and salt, if using. For short-grain rice add 1 ¾ cups water; for long-grain rice add 2 cups water.

Step 3

Bring the rice to a simmer over medium-low heat. Allow it to simmer, uncovered, for 5 minutes. Reduce the heat to low, cover, and cook until the rice is tender, 35 to 40 minutes.

Step 4

Remove the saucepan from the heat and allow the rice to sit, covered, for 10 minutes. (This will allow the water to absorb and help ensure fluffy rice.) Fluff with a fork before serving.
